From My Kitchen: Red Curry Cornish Hen

Red Curry Cornish Hen with Potatoes, Mushrooms and Carrots
One of our favorite things to do is cook for each other on our nights in. This dish has become a frequent repeat as it is so easy to do yet the payoff is huge. My Red Curry Cornish hen is simply delicious! I use a small chicken and combine just five other easy to get ingredients to make this dish. It is a perfect meal for two to four people. We usually end up eating it all just between the two of us! Here is the recipe below. Enjoy making this scrumptious dish!
1 1/2 lbs Cornish Hen
1 1/2 cups of Coconut Milk
4 tablespoons of Red Curry Paste
10 Baby Potatoes
1/2 cup of Baby Carrots
1/4 cup of sliced mushrooms
Before Placing in the Oven
Place the whole chicken in a round casserole dish. Rub the red curry paste all over the chicken. Add potatoes, carrots and mushrooms around the chicken. Pour the coconut milk over the dish. Bake covered for two hours in the oven at 425 degrees. Uncover dish for the last 45 minutes. Serve with a side salad or rice.
