From My Kitchen: Red Curry Cornish Hen

 
Red Curry Cornish Hen with Potatoes, Mushrooms and Carrots
 
One of our favorite things to do is cook for each other on our nights in. This dish has become a frequent repeat as it is so easy to do yet the payoff is huge. My Red Curry Cornish hen is simply delicious! I use a small chicken and combine just five other easy to get ingredients to make this dish. It is a perfect meal for two to four people. We usually end up eating it all just between the two of us! Here is the recipe below. Enjoy making this scrumptious dish!
 
 
1 1/2 lbs Cornish Hen
1 1/2 cups of Coconut Milk
4 tablespoons of Red Curry Paste
10 Baby Potatoes
1/2 cup of Baby Carrots
1/4 cup of sliced mushrooms
 
Before Placing in the Oven
 
Place the whole chicken in a round casserole dish. Rub the red curry paste all over the chicken. Add potatoes, carrots and mushrooms around the chicken. Pour the coconut milk over the dish. Bake covered for two hours in the oven at 425 degrees. Uncover dish for the last 45 minutes. Serve with a side salad or rice.

Mile High Loving

With friends at Second Home Kitchen + Bar for Brunch
We have been in Denver for three months and are settling well into our home in Cherry Creek. We love this city and everything it has to offer. The lifestyle here is unequal to anywhere else I have lived and that list includes some of the best cities in the world! Nothing beats the mix of city life and year round outdoor activities. The options for dining and nightlife are endless and every area of the city has its own vibe. Here are a list of some early favorites for restaurants and cafes in no particular order.
 
1. Second Home Kitchen + Bar
 
We have been to this hip Cherry Creek spot about four times in two weeks. We have done brunch, dinner and drinks at the bar. The menu is all about good home cooking fare and is excellent! Some must haves are the Chicken + Waffle, Colorado Lamb Meatballs, Cheese and Charcuterie and Second Home Burger. 150 Clayton Lane, Denver 80206
 
2. TAG
 
This Larimer street restaurant is one of the first that we went to when we were deciding whether to move to Denver. The amazing atmosphere, incredible staff and scrumptious food probably sped up our decision! This place has some of the best food I have ever tasted anywhere in the world. 1441 Larimer Street, Denver 80202
 
3. Cru Wine Bar
 
Just across the street from TAG is Cru Wine Bar, one of our repeats. It is a perfect spot for a sexy date. We always have dinner by the bar and start with the most delectable Goat Cheese Beignet followed by the Filet Mignon. 1442 Larimer Street, Denver 80202
 
4. Old Major
 
I am from Saint Lucia where we eat pig's tail and feet so when I heard that this Highland restaurant had a nose to tail butchery program, I was sold. Their small and precise menu will never disappoint. I had the Nose to Tail plate with meatballs, braised belly, smoked rib, crispy ears and polenta. I know, I'm salivating as well as I write this! 5. Starbucks Cherry Creek
 
This may seem like an odd choice to round off my five favorites but this is the best Starbucks I have been to on the planet. It's just so comfy with sofas around a fireplace outside and the baristas are amazing. One of the baristas, Jacob, shared his special concoction with us and that is all I have been drinking. It's a toffee nut upside down caramel macchiato, hold the vanilla. Seriously, its extremely good. 200 Fillmore Street, Denver 80206

Home Sweet Home

The Main Floor
We have fully settled into life in this great state of Denver and recently moved into our new home in Cherry Creek. The house is truly my dream home in the perfect location. Over the next few weeks and months, I will be putting on my amateur interior designer hat and create a look that we will feel comfortable in for many years to come. The house is three floors with a roof top deck so there will be a lot of square feet to decorate!
 
I am extremely lucky when it comes to decorating as Richard and I have exactly the same taste in furniture and d├ęcor. We both like sophisticated surroundings with a mix of antique pieces and tasteful contemporary ones. We also abhor any type of pattern, print or bright loud colors so the walls and large pieces will all be muted and neutral. Just like my closet!
 
After many years of living in apartments in London, New York and San Francisco, it is really fantastic finally to settle down in a home that we can make our own.

The KIND Factor


 
One of my favorite snack companies has just shot to the very top of my list. The KIND company has just got even more fantastic because on February 17th, they will be celebrating Random Acts of Kindness Day right here in Denver! According to the company, 'An integral part of KIND's DNA is collaborating with our community to help make the world a bit kinder.'  KIND has pledged to commit 24 acts of random kindness all over the city and want you to join in on the fun by doing random acts of kindness wherever you are. Here are just some of the wonderful things the company is planning to do on February 17th. Let them know what you get up to @KINDsnacks #Kindawesome.
 
9:30-10 am: Deliver bike helmets to Wish for Wheels in Greenwood Village.
11-11:30 am: Deliver a jeep full of dog/cat food and animal toys to the dumb friends league.
11:45: Donate old books/magazines to Presbyterian/ St. Luke's Hospital.
12-1pm: Deliver KIND to post office and fire houses throughout Denver.
1-3pm: Deliver hand sanitizers to East High School for school classrooms.
1-3pm: Purchase coffee for the person in line behind you at Starbucks (three various locations).
1-3pm: Donate gently used clothing to Goodwill.
3-5pm: Deliver KIND bars to a local construction crew downtown.
3-5pm: Deliver KIND to local restaurants for the kitchen staff to enjoy.
3-5pm: Door deliveries of KIND bars with an apartment complex.
